RECIPE: Italian Cauliflower Casserole

I love sharing fun cooking moments with you... let's face it, if you're like me and have a family to feed... ya gotta get creative (really creative) in the kitchen more often than not!

Italian Cauliflower Casserole

Ingredients:

1 large cauliflower, cut into florets
2 tablespoons olive oil
Salt, pepper and green Tabasco (to taste)

1 jar of garlic spaghetti sauce (or 2-3 cups of pizza sauce)
1 can pre-sliced black olives
2 cups pepper jack cheese
3 pre-cooked turkey sausage patties, thawed and diced
½ cup Parmesan cheese

Instructions:

Toss cauliflower in oil and spread (in a single layer) onto a cookie sheet lined with foil. Sprinkle florets with your favorite seasonings and roast in a preheated 375 degree oven for 20-30 minutes, mixing half way through. The cauliflower should be tender but not mushy.

Mix all other ingredients and pour over florets and bake in a 350 degree oven until cheese is melted and the sauce is bubbly. The toppings are really up to personal taste and what you have in your cupboard. Diced green peppers would be good, chicken chunks, mushrooms, pepperoni...get creative!
